Tequila is a distillate made from agaves. It has become world famous with salt and lemon, and is an essential ingredient in many cocktails.
Tequila, Mexico’s national drink, is produced in accordance with strict laws passed by the Mexican government using only the hearts of a special type of agave, the blue agave „tequilana weber“. Only a distillate obtained from this special type of agave and that comes from the precisely demarcated cultivation area, namely the province of Jalisco, may bear the name „Tequila“. This agave that is used for making Tequila grows at altitudes of 1500 to 2000 metres around the city of Guadalajara, the capital of Jalisco province – and therefore also the world’s Tequila capital.
The high-quality blue agave plants do not mature and cannot be harvested for many years after planting. The hearts are distilled twice in the traditional copper pot stills (alambiques) using the traditional method. Both origin and production are strictly monitored by the Consejo Regulador del Tequila A.C. Only distilleries that fulfil the strict quality and origin regulations are awarded their individual inspection numbers – the Número de Orígen Mejicano and the Denominación de Orígen Tequila.
